This year, our family is committed to living a healthier life.  To do so, we have head to make some huge lifestyle changes.  Since the start of our lifestyle change we have been doing our best to introduce everyone to new foods.  We have learned that some of us do like fish and some don’t and I discovered that I LOVE crab.

One thing neither Zack or I have ever really been a fan of is vegetables, granted I do enjoy more of them then he does. Mini Mexican Inspired Meatcakes

In light of our family New Years resolution to give up fast food, we have been eating more home cooked meals therefore we have been experimenting and trying new recipes.

Last night’s dinner consisted on some awesome Mini Mexican Inspired Meatcakes and Mexican Rice.
It was AWESOME!!

To make the meatcakes you will need:

1lb. ground beef
1/2 cup finely chopped onions
1 egg
12 saltine crackers crushed (about 1/2 cup)
1 1/2 cups shredded Mexican cheese blend
1 cup thick and chunky salsa

PreHeat the oven to 400*

Mix the beef, onions, egg and crackers with 1 cup of the cheese and a 1/2 cup of the salsa.
Press into 12 muffin cups sprayed with cooking spray and indent each in the center with a spoon.
Bake 20-25 minutes and then top with the remaining cheese and salsa and bake for an additional 2-5 minutes, until the cheese has melted.

Serve and enjoy!
We served ours with Mexican rice along with salsa and sour cream on the side.

The Megalomaniac Mommy’s Baked Mac & Cheese

Since we prepared our own Thanksgiving Dinner at home this year, I knew it was mandatory that I have a dish to serve the kids that would make them all happy! With 3 kids, we go through a lot of macaroni and cheese, usually out of a box because let’s be honest, it’s easy to make and less time consuming. As a side dish to our Thanksgiving dinner, I made a batch of baked mac & cheese and it was a hit! We devoured the ENTIRE pan!!!

Thanksgiving Recap – The Turkey

As I mentioned a few days ago, this year, the Alex and I set out to create our first Thanksgiving dinner at home.  I put the Alex in charge of the shopping and selection of the bird.

He returned with a massive 22 pound bird!

For our first time cooking a turkey, we thought we would play it safe so we decided to season the bird with salt and pepper inside and out, stuff with aromatics ( we used 2 large sliced Braeburn apples, 5 small yellow onions quartered, 1/2 lb. carrots, and threw in some sage, tarragon and rosemary) and tied it up. Once the turkey was all tied and situated, we brushed it with lots and lots of butter! From there we covered it with tin foil and baked it in the oven at 350* for 4.5 hours.

Salt and peppered inside and out.
Covered in salt, pepper, stuffed and buttered!

And then off to the oven for 4.5 hours.

After baking for 4.5 hours at 350* we basted the turkey with more butter and pan drippings and then put it back in the oven for 45 minutes at 425*

And then we pulled out the most beautiful and juiciest bird EVER!

We let the turkey rest for about 30 minutes after pulling it from the oven and finished off the other dishes for our dinner and then the Alex carved his first turkey!

We had MORE than enough turkey!
This is what came from one breast of our massive bird and we didn’t even devour half of it!

So yes, we have a TON of leftover turkey and I will be busy the rest of the weekend creating meals from it, including soup!  Wish me luck!

Quick Lasagna Casserole

This recipe is a creation of the Alex’s and is definitely a family favorite in our home!

Ingredients
-1lb ground beef or turkey
-26-32oz of spaghetti sauce ( we like to use a mixture of our favorite Ragu sauces).
-1/2cup chopped yellow onion
-4oz canned or fresh mushrooms
-8oz shredded Italian cheese blend
-12oz mafalda pasta
-garlic salt

 

Directions
1.Brown hamburger with mushrooms and onions. Lightly season with garlic salt.
2.Drain grease, add sauce.
3.Add cooked mafalda pasta and stir.
4.Mix in 6oz of cheese and save the remainder to garnish!
