The Great Bunny Train

The Easter Bunny is coming to town! But before he travels the world – hiding colored eggs and baskets filled with chocolate for children of ALL ages to discover on Easter morning – he will be visiting the National Railroad Museum!
Each admission to the Great Bunny Train includes a day of entertainment, crafts, and games for children of all ages, including a chance to ride the train and meet the Easter Bunny. Television station WFRV (Channel 5), Applied Leadership, Green Bay Seven Up Bottling Company, Great Harvest Bread Company and Beerntsen’s Candies are event sponsors.

An Easter egg hunt and other event activities can be enjoyed throughout both event days.  Visit the craft station where everyone can make an Easter crown, decorate eggs and an Easter bag (to bring home your candy and crafts).  Games will include an egg spoon game, ring toss, Easter bowling and the Big Boy Ellie Bag Toss game!  All of the Museum’s regular exhibits will be open. The entertainment stage will have a variety of musicians and magicians.

We broke out the the crock-pot today and whipped up this delicious number, Crock-Pot Cheesy Potato Bacon Soup!

Crock-Pot Soup, Cheesy Potato Soup, Potato Soup, Chessy Potato Bacon Soup

Ingredients

3lbs Salad Red Potatoes cut into 1 inch cubes
1 medium onion diced
2 cloves minced garlic
38 oz chicken broth
8 oz cream cheese (I recommend Philadelphia Original Cooking Cream)
1/2 tbsp salt

We broke out the the crock-pot today and whipped up this delicious number, Crock-Pot Cheesy Potato Bacon Soup!

1/2 table spoon pepper
8 ounces shredded cheddar cheese or cheddar cheese blend
1 – 2.8 ounce package real bacon pieces

Directions

Combine diced potatos, onion, garlic and broth in crock-pot and cook on low 8 hours or on high for 5 hours.
Once the time is up, add cream cheese, salt, pepper, and half the package of bacon pieces. Stir until cream cheese is well blended. (You can also use an immersion blender to help blend). Continue to cook for 15 minutes and add 2 cups of cheese, mix well and cook for additional 10 minutes or until cheese is nice and melted.

Serve in bowl or bread bowl as we did and top with cheese, bacon, green onions and even sour cream if you like!

Homemade Bread Bowls #Recipe

Ingredients

2 packages of active dry yeast
3 cups warm water
2 teaspoons salt
3 tablespoons vegetable oil
7 cups all-purpose flour
1 egg
1 table spoon water

Directions

In a large bowl, dissolve yeast in 3 cups warm water. Let it stand for 10 minutes or until creamy.

Add salt, oil and 4 cups of flour to the yeast mixture and beat well. (We used our Kitchen Aid mixer for this). Stir in the remaining flour 1/2 a cup at a time while beating. (We used the mixer at medium speed with a dough hook.)

When the dough has all pulled together dump it out onto a lightly floured surface and knead it until smooth (add a little water here and there if needed).

Once the dough is smooth, lightly oil a large bowl, place the dough in a bowl, turn it and coat it will oil.

Cover the bowl with a damp cloth and place it in a warm place and let it rise until doubled in volume. (We were in a hurry so we turned the oven on and set the bowl on top of the stove to get it to rise in 30 minutes).

Punch the dough down (this was Zack’s favorite part!) and divide it into 8 equal portions. Shape each in a 3-4 inch round loaf. Place loaves on lightly greased baking sheets, cover and let rise in a warm place until doubled in volume. (Again, we cheated by setting them on top of the stove and they doubled in size in about 15 minutes).

Preheat over to 400*.

In a small bowl, beat together 1 egg and 1 tablesppon water and lightly brush the loaves with half of the egg wash.

Bake in oven at 400* for 15 minutes. Brush remaining egg waash on loaves and bake 10-15 more minutes or until a golden brown

Let cool.

To make a bowl, cut out center of bowl and remove the guts (save them to dip in your soup!) Fill bread bowls with your soup or choice and serve immediately.

These bread bowls were made by 14 year-old Zack.

Goodbye Cable, Hello Extra Money

As you know,we have been trying to find ways to cut costs now that we are making room for another baby.  In order to make room, we will be remodeling the basement and adding a 5th bedroom, a bathroom and rec room/office.  As I’m sure you are aware, remodels are not cheap and we’ve sunk what would have been a large amount of money in our savings into this remodel which means we have to cut costs somewhere else.

One of the changes we have made is we got rid of cable.  Yes, we do watch TV but 97% of the time we are watching something that we recorded days, sometimes weeks earlier.  We’ve also been paying for a Netflix and Hulu Plus subscription for well over a year that we use more than our cable.

Needless to say, this decision was an easy one for us.  Although we still have to pay for internet, we are still saving over $100 a month which for us, is a HUGE savings.

Instead of paying  at least $185 for cable, 1 DVR, a home phone that we NEVER use and Internet, $8.43 for Netflix, and $7.99 for HuluPlus which adds up to $201.43 a month, sometimesa little more if someone bought a movie off of tv and taxes.  We are now paying $50 for Internet (plus taxes), $8.43 for Netflix and $7.99 for HuluPlus which equals $66.42.  There is also the added bonus that we also get to take advantage of all of the great movies and tv shows availalbe on Amazon as well since we pay $79 for Amazon Prime each year!

So here we are streaming our favorite shows through our XBOX360 and rocking an awesome flat TV antenna to pick up all the local stations as well.  Thankfully everyone has adjusted quite well to the change and I love the extra money!

Homemade Laundry Detergent #DIY

Having 6 people in our family (soon to be 7) we tend to have a lot of dirty laundry which means we go through tons of laundry detergent. Instead of forking over a bunch of money to buy bottled detergent or giant boxes, I thought I would give making my own detergent a try.

The cost to make the laundry detergent was approximately $8.11 and will last for at least 100 loads of laundry. I’ll take that savings!!

After using this detergent on a load (2 tablespoons of soap per load) of whites, I am super happy with the results and even happier that our whites are bright again!
