Homemade Granola {Steel Cut Oats} Recipe

Homemade Granola with Steel Cut Oats

Ingredients:

6 cups Steel Cut Oats
6 tbsps of Organic Brown Sugar
1 tsp Ground Cinnamon
1/2 tsp Kosher Salt
2/3 cup 100% Natural Honey
1/2 cup Vegetable Oil
2 tsp Vanilla Extract
2 cups Dried Fruit (I used Bananas, Papaya and Pineapple)
1 cup Chopped Almonds

Directions

1.  Combine oats, sugar, almonds, dried fruit, cinnamon and salt in a large bowl.  Mix and set aside.

2.  In a smaller bowl, combine honey, vegetable oil and vanilla.  

3.  Add the mixture of honey, vegetable oil and vanilla to the oats and stir.

4.  Spread the mixture out on a greased cookie sheet and bake at 350* for 15 minutes.  

5.  After 15 minutes, take the pan out, mix it up and spread it out again and then back for 5 minutes.

6.  Continue to remove, mix and back in 5 minute intervals until granola is brown.

7.  Once granola is brown, remove from oven, mix and let it cool before put it in an air tight container to store.

8.  Enjoy as a dry snack or in a bowl with milk or any other way you like to eat your granola!

 

Egg, Ham & Cheese Breakfast Bake {Recipe}

We are BIG fans of breakfast around here, so big that we have breakfast for dinner at least once a week. Aside from your breakfast basics like cereals, eggs, pancakes, and waffles or French toast, I like to throw a nice breakfast bake in every now and then. Since we are still swimming in ham from Easter, I thought it was time to do a Egg, Ham and Cheese Breakfast Bake and it was a hit with the entire family!

Ingredients

1 dozen eggs
1 can of refrigerator biscuits cut into pieces
2 cups of diced ham
1 lb cheese
1/2 cup milk
1/4 cup green onion diced
salt & pepper

Directions

1.  Beat eggs and milk together in a large bowl and add remaining ingredients.

2. Add a dash of salt and a pink of pepper and mix.

3. Pour mixture into a 9×13 casserole dish and bake at 350* for 30 minutes or until knife comes out clean.

4. Serve and enjoy!

Crock-Pot Cheeseburger Soup {Recipe}

It’s no secret how much we love to use our Crock-Pot around here.  We find that it is much easier to feed our large family this way. We can make big enough batches of food and it’s also great to be able to prep and make something in the morning, toss it in the crock-pot and leave it to cook during the day while we do other things.  Crock-pot cooking definitely makes things a lot easier around here.

Mother Nature was evil to us once again today……yesterday was wearing flip flops and had grass and today I woke up to this.

Since Mother Nature decided to deliver snow to us today, we thought today was the perfect day for soup so Alex got to work this morning prepping all the ingredients and throwing them in the crock-pot for Cheeseburger Soup!

This soup was soooo good, the entire family loved it!  All of the kids ate it and didn’t even know they were eating all kinds of vegetables…..vegetables they never want to eat!!!!

Crock-Pot Gyros & Homemade Tzatziki Sauce {Recipe}

I think I mentioned in the past that I LOVE Greek food.  Greek salads, gyros, baklava, pastitsio, moussaka….basically all Greek food. There is just something about it that makes my mouth water.  

If I could eat one Greek dish everyday, it would be gyros.  They are soooooo good!

Over the weekend, Alex made Crock-Pot Gyros with homemade Tzatziki sauce and they were absolutely delicious!

Not only were these gyros and tzatziki sauce yummy, they were both super easy to make!

Crock-Pot Beef Tips & Gravy

Another new recipe for our family and another hit!  This recipe for Beef Tips and Gravy is better then what I’ve had at weddings with family style dinners and is definitely something we will be making again.  You can follow this recipe and cook day of or make it all in a freezer bag and toss it in the freezer to use at a later date.
