It’s Time to Get Creative with your Jif Peanut Butter #MC

I will never forget when Alexander’s love of PB&J sandwiches began…..I have a photograph.  It happened just 16 days before he became a brother.

I wasn’t feeling well that day, Alex was still working 3rd shift so he was sleeping and Alexander told me he was a big boy and wanted to make his own PB&J.

Who was I to stop him?

Not only did he make himself one that day, but he made one for mommy too! (Love that kid!)

Alexander’s love of PB&J sandwiches and peanut butter in general has continued to grow.  These days he eats peanut butter on graham crackers, tortillas, apples, and so much more.  I believe that peanut butter is his favorite food and if I let him, he would eat it at every meal!

With his creativity, I only wish Alexander was 6 years old this year because now through November 8th, Jif Peanut Butter is running their Most Creative Sandwich Contest – challenging families across the country to create an original sandwich recipe that includes two tablespoons of your favorite Jif products!  Parents of children ages 6-12 can submit their original sandwich for a chance to win a $25,000 college fund and a trip to New York City!

Crockpot Breakfast {Recipe}

As you know, I like meals that are quick and easy to throw together and don’t take a lot of time and even more if they can be cooked in our crockpot!  Since we are also big fans of having breakfast for dinner, I thought it was time to create a Crockpot Breakfast!

This crockpot breakfast is super easy to make, you just throw everything into the crockpot and let it cook on low for 6-8 hours. (We let ours cook for about 7).

Ingredients:

1 -26oz bag frozen hashbrowns

1 dozen eggs

1 cup milk

4 slices bread torn into pieces

3 packs frozen breakfast sausages, cooked and sliced

1lb shredded chedder blend cheese

Salt & Pepper to taste

**You can add other items such as fresh mushrooms, green onion, bacon pieces etc. to adjust to your family.

Directions:

Spray crockpot or line with crockpot liner.  Spread hashbrowns evenly in bottom of crockpot.  Next add your sausage and bread.  Beat eggs and milk together in a bowl and add salt & pepper.  **Add additional ingredients if you choose.**  Sprinkle some cheese on top of everything but don’t use all of it.  Next pour your eggs into the crockpot and then smother the top of it in cheese and let it cook for 6-8 hours on low.

Serve and enjoy!!

Quick & Easy Pepperoni Pizza Casserole {Recipe}

We’ve been trying to create some new dishes in our house over the last week.  We want to create meals that the entire family likes and that are inexpensive to make (feeding a family of 7 is expensive).  I am also trying to come up with some recipes that will also make great freezer meals as well since Alex and I are planning on spending some time making freezer meals in 2 weeks and hopefully getting our freezers stocked for awhile.

Tonight’s concoction was this Quick & Easy Pepperoni Pizza Casserole that Zack and I threw together with items we had in the house.  To make this dish, you will need the following:

Ingredients

1 – 16oz box rotini

3 – 15oz cans of pizza sauce

1 package of pepperonis

8oz mozzerella cheese

4oz cheddar blend cheese

Directions

Cook rotini, drain and mix in all 3 cans of pizza sauce.  Place sauce covered noodles in a 13×9 casserole dish and lay pepperoni on top, cover with cheese, throw a few more pepperonis on and add more cheese. *If you want to add additional pizza toppings you can do that now too! 

Once your toppings and cheese are on, bake at 350* for 20 minutes.

Serve and Enjoy!


This was an absolute hit in our house and I’m looking forward to having it again and adding some more toppings to it! It was great to create a dish the whole family enjoyed!
