Broccoli Ham & Cheese Casserole – Crock Pot Recipe

If you are looking for a quick, last minute meal to throw together that is inexpensive, this is the meal for you!

I have kids that love ham and cheese so I thought why not add a little brocooli and rice to it and toss it all in the crock pot and let it cook for a few hours?

This meal is so easy to throw together, just grab the ingredients below.

Ingredients

  • 1 can 10 3/4 oz condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup diced ham
  • 2 cups broccoli florettes
  • 1 cup uncooked instant rice
  • 8 ounces processed cheese spread, cubed (such as Velveeta)

Directions

Place soup in slow cooker and gradually whisk in the milk until smooth. Add remaining ingredients. Cover and cook on Low 3 1/2 -4 hours. If possible, stir mixture half way through cooking.

*This recipe can also be made with pasta, I partially cook mine first.

Sweeten Your Season with Mint Chocolate Pudding Fudge

Even though the holidays are behind us, there are still holiday events to attend. I know many companies host their holiday events in January as well as many families.

Since the holiday season isn’t truly over, it’s always good to have a quick and delicious recipe on hand so you can whip something together to bring along to different events.

When we visit someone else’s home for a holiday event, we like to bring a special little treat along and I’m pretty sure I have found our new favorite, Mint Chocolate Pudding Fudge, a quick and easy recipe from Kraft.

If you are looking for something simple yet delicious and sweet to share then this is the recipe for you.

To get started, you will need the following ingredients.

  • pkg. (4 oz.) BAKER’S Semi-Sweet Chocolate, divided
  • 1/2 cup butter or margarine
  • 1/2 cup water
  • tsp. peppermint extract
  • pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
  • cups powdered sugar
  • 2/3 cups JET-PUFFED Miniature Marshmallows
  • 1/3 cup finely crushed starlight mints

Once you have all of your ingredients on hand, you will want to prep your pan. Line 8-inch square pan with foil, with ends of foil extending over sides.

After you have your pan prepped, it’s time to start making some delicious fudge!

Microwave 4 oz. Baker’s chocolate, 6 Tbsp. butter and 1/2 cup water in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended.

Next you will add the peppermint extract and dry JELL-O Chocolate Flavor Instant Pudding mix and stir until well blended.

Your next step is to add the powdered sugar, 1 cup at a time, stirring after each addition until well blended.

Once everything is well blended, you are ready to pour your mixture into your prepared pan and press it into an even layer with the back of your spatula.

To finish your fudge, microwave the remaining butter and chocolate in large microwaveable bowl for 1-1/2 minutes or until butter is melted and stir until chocolate is completely melted and mixture is well blended. Pour over fudge and spread to completely cover bottom layer. Then top with 2/3 cups JET-PUFFED Miniature Marshmallows and 1/3cup finely crushed starlight mints and refrigerate for 2 hours or until firm.

Remove fudge from foil, cut, and serve!

This was my first time making fudge and now that I know how easy it is, I will be doing it again! This recipe was easy and delicious and kids loved it too!

Hidden Valley Roasted Garlic Ranch Meatballs

I know I have said it before but I figured it was only right that I mention once again that around here, we like to eat. Since meeting Alex back in 2006, I have developed a new love for food, trying new things and even getting creative in the kitchen and coming up with our own dishes.

Most of the time when we are eating a meal, I have to have my Hidden Valley Ranch in a small bowl next to my plate for dipping. Seriously, I love to dip everything in ranch dressing and no, it’s not a Wisconsin thing. It started back when I was pregnant with Zack. Back then I used to only dip french fries in it but now I have graduated to sandwiches, burgers, onion rings, chicken nuggest, mozzarella sticks, veggies, and more!

Yes, it is very possible that I may have a problem.

Now that I am trying to eat better and lose weight, we have been creating new meals and of course, I’m still trying to get my ranch fix in there somehow.

Hidden Valley Ranch recently launched a line of new flavored ranch dressings, so we picked up a few bottles on our latest trip to Walmart.

I snagged a bottle of Avocado, Sweet Chili and Roasted Garlic because I figured I could find a way to incorporate each of them into a meal.

Our latest creation is Hidden Valley Roasted Garlic Ranch Meatballs and they were absolutely delicious!

I loved being able to satisfy my craving for ranch as well as coming up with a meal the whole family enjoyed.

You can recreate our Hidden Valley Roasted Garlic Ranch Meatballs in just a few simple steps.

First, you will need the following ingredients:

  • 1lb lean ground beef
  • 1/2 cup of plain breadcrumbs
  • 2 eggs
  • 3 tablespoons of Hidden Valley Garlic Roasted Ranch Dressing
  • Pinch of salt

(We also made Spicy Sweet Chili Ranch Meatballs using the same recipe but just added 1/4 tsp. ground cayenne pepper and 1 tsp crushed red pepper flakes).

To get started, measure out all of your ingredients in a mixing bowl.

After you have everything in the bowl, mix it together really well. Once it is all mixed together it should be nice and sticky.

Next, using a spoon, grab clumps of the mixture to roll into meatballs using your hands and place them on a broiler pan.

When you have all of your meatballs rolled set oven to broil (high if you have the option) and cook for 5 minutes and then flip and put them back in for another 5 minutes.

Before removing them from the oven, use a meat thermometer to make sure your internal temperature is at least 160°.

If the internal temp is correct, remove the meatballs from the oven and let cool for a few minutes.

Once  they are done, drizzle with a little Hidden Valley Roasted Garlic Ranch and enjoy!

I’m already looking forward to making them again!

Over the weekend, we actually had the chance to sit down together a have a meal as a family and it was the best!

We love to put together meals that everyone enjoys but also meals that don’t require a lot of prep work or a lot of dirty dishes.  Our meal for this family dinner was our take on the No-Boiling Lasagna recipe from Ragú®. Not only was dinner saucesome but being with all of my kids and my husband made it even saucesome-ier!

Our Take on a Ragú® Classic Recipe

Often time we stumble upon recipes that we know that everyone will enjoy but I’m always looking for a way to change them up and sneak protein and veggies in so I know the kids are getting everything they need.  We took the Ragú® no-boiling lasagna recipe and made it our own by adding 93% lean beef and spinach to it. The kids, actually all of us, couldn’t get enough of it. It was absolutely delicious! Ragú® Old World Style Traditional Sauce has a delicious taste your whole family will love

Make Your Own Meaty Cheesy Spinach {No Boil} Lasagna

All you need to make this delicious lasagna is:

  • 2 – 1lb. 8oz  jars of your favorite Ragú® Sauce (We used the Old World Style Traditional Sauce).
  • 2 containers (15 oz. ea.) ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 2 eggs 
  • 12 uncooked no-boil lasagna noodles
  • 5oz. bag of spinach
  • 1lb. lean ground beef (or other ground protein).

It’s simple to prep and make this lasagna and takes less than 15 minutes from start until it hits the oven.

Prep, cook and layer as pictured above and once you are done layer, top it with cheese and pop it in the oven at 375° for 1 hour.

Once your lasagna is baked, let it cool, cut and serve!

Celebrate Breakfast with Honeycomb Monkey Munch

I remember as a kid in the 80’s seeing this commercial for the first time and singing the catchy tune over and over and over.
