Organic Chicken Salad {Recipe}

As you’ve probably read, Alex and I have been making some great changes to our diet, eating habits and are focusing on getting ourselves healthy.  One thing that has been hard for us on this journey is to find recipes that we really enjoy or that are easy to prepare ahead and enjoy throughout the week.

Recipes like this one for organic chicken salad are just what we are looking for, something that is good for us, easy to prepare and it can be served multiple times in a week and in a variety of ways.

This salad is great to serve as is, on bread, with crackers, pita chips, in a wrap or however else you wish.

Ingredients

  • 2 Large Organic Chicken Breasts
  • 2 Strips Organic Bacon
  • 1/3 Chopped Red Onion
  • 12 Diced Grape Tomatoes
  • Splash of Lemon
  • ½ Cup Spectrum Canola Mayonnaise
  • 1 Chopped Garlic Clove
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Cayenne Red Pepper
  • 1 tsp. Tarragon
  • 1 tsp. Cilantro
  • 8 Slices Glutino Multi-Grain Bread

 

Instructions

  1. Turn stove top burner on high heat. Place chicken in pan and cover with water to poach. Boil chicken. When water is almost evaporated turn heat to low. Cook for a total time of 20 minutes or until chicken is cooked through. Set chicken aside to cool.
  2. Place 2 strips bacon in microwave. Cook on high for 3 minutes or until almost crispy. Set bacon aside to cool.
  3. Chop onion, grape tomatoes, and garlic clove into small pieces.
  4. Slice chicken breasts and bacon into small pieces. Place in large mixing bowl with onion, grape tomatoes, garlic, tarragon, cilantro, cayenne red pepper, onion powder, garlic powder, and salt and pepper to taste. Stir. Add splash of lemon and canola mayonnaise. Mix well.
  5. Toast 8 slices Glutino multi-grain bread. Add mixture to your bread and enjoy your gluten-free chicken salad sandwich, or serve with chips, crackers or alone.
  6. Enjoy!

Barbados is one of the most developed of the Atlantic and Caribbean islands and still retains some of the cultural aspects attained from its British roots. Contrary to many beliefs, Barbados is not just a place of fine beaches; it is also a tourist destination that boasts of architectural and natural wonders. If you are looking to visit this magnificent destination any time soon, the following are some of its must see attractions:

Crane Beach

This beautiful beach features pink, coral sands and was at one time a boat landing and cargo unloading spot. Crane Beach is presently one of the most popular beaches on the island with locals and tourists alike coming here to frolic, surf and sunbathe. It is also a great place for snorkeling and swimming. On land, it is dotted by tranquil botanical gardens and caverns.

Bathsheba

Bathsheba is a popular village among Barbadians and international surfers. It is located in St. Joseph parish, which is about fourteen miles from Bridgetown, and is studded with huge boulders which many say look similar to Bathsheba’s, King David’s wife’s, bath. If you are not into surfing, its inshore pools won’t disappoint, and are the answer to the hot tub in this area.

The Andromeda Botanic Gardens

If you wish to unwind after spending the day checking out attractions on the island, the Andromeda Tropical Botanic Gardens offer a serene environment. Overlooking the Atlantic, they have a wide variety of tropical plants from all over the world and boast a view to die for. Some of the most unique flora here are the breadfruit trees, which were part of a collection belonging to the infamous Captain Bligh. Rare palm and succulent plant species can also be found here. In addition, there is a large number of bearded fig trees, which were once abound on the island, causing Portuguese sailors to christen the island “Barbados”, meaning “the bearded ones”.

Gun Hill Signal Station

This site was built at the beginning of the 19th century to warn of approaching enemy ships and signal the arrival of vessels with cargo. It boasts awesome vistas of the whole island, and is situated in St. George.

Conclusion

Barbados is an island that receives a large number of tourists every year. It has numerous attractions to check out. However, the highlighted are just a few of its many must visit sights.

Travel Plans

As I continue to look into a family road trip this summer and research different destinations I think I have decided that we need to make Canton Ohio a definite stop.  In case you haven’t heard, we are HUGE football fans and if you didn’t know, the Pro Football Hall of Fame is in Canton.

I think it would be a lot of fun to check out the Hall of Fame and check out some of the history of football and experience the super bowl theater.

As I said before, I want to also visit the St. Louis Zoo and the Arch and I’ve added Millennium Park in Chicago to the list but I need some more destinations. I’m thinking maybe a stop in Metropolis IL to visit the Superman Museum (we have some big Superman fans too) but I’m not sure what else.

This is where I need help.

If we are traveling through Illinois, Missouri, Indiana, Ohio and Kentucky where do you think we should stop? What are some fun, family friendly things to check out or some unique must sees?

Midwest Amusement Parks

Both Zack and Libby have had the pleasure of traveling to Six Flags Great America in Gurnee, Illinois.  They were both able to make this trip with their classmates at the end of 8th grade.

All I have heard since they both went on this trip is,”When can we go back”?

My kids are now officially roller coaster junkies.

Prior to their trip to Six Flags, they had only been on the Zippin Pippin roller coaster here in Green Bay at Bay Beach Amusement Park.

Now that I know my two oldest are amusement park junkies I am hoping to take them on a trip to Ohio in the next year so they can enjoy Cedar Point and a few other amusement parks, even a few that cater to the small kiddos.

I would also love to travel coast to coast, as a family and check out some different amusement parks and playgrounds that I think we would really enjoy together.
