Four.

I don’t even know how it happened.
Some how, 4 years went by in the blink of an eye.
It is hard to believe that 4 years ago I was laying in a hospital bed waiting to me my son.
And now, now he is turning 4.
In four years he has gone from a quiet, itty bitty baby boy and turned into a loud, rambunctious, ball of fire and noise, a big brother and a great kid who is a TON of fun!
Happy 4th Birthday to my little Alexander (even though you aren’t so little any more!)

Love you little man!

Goodbye Pull-Ups!

It has been 5 days since Alexander has used a Pull-up!
We couldn’t be happier!!!
This past Saturday I realized we were running low and that’s when I decided we were slapping the plastic liner on his mattress and having him take a nap in his underwear.
Nap time was a success.
When he woke up 1.5 hours later he went to the bathroom right away.
Saturday night we decided he would go to bed for the night in his underwear as well.
He was asleep shortly after 8pm and woke up at 2:30am because he had an accident.
Yes he had an accident, but this was progress….he WOKE UP!!
On Sunday, he successfully napped in underwear once again AND made it from 9pm Sunday until 6:30am on Monday in his underwear with zero accidents!
This has continued since.
Last night, he was so tired he had an itty bitty accident in bed but woke up and ran to the bathroom to take care of everything and then went right back to sleep and made it through the rest of the night.
I am SOOOOOOO happy!!
We are finally done with Pull-ups and we don’t have to buy diapers or wipes for Ellie for quite some time since we stock piled while I was pregnant!
Here’s to some extra money to put in savings for a down payment on a house!!!!

Mini Mexican Inspired Meatcakes

In light of our family New Years resolution to give up fast food, we have been eating more home cooked meals therefore we have been experimenting and trying new recipes.

Last night’s dinner consisted on some awesome Mini Mexican Inspired Meatcakes and Mexican Rice.
It was AWESOME!!

To make the meatcakes you will need:

1lb. ground beef
1/2 cup finely chopped onions
1 egg
12 saltine crackers crushed (about 1/2 cup)
1 1/2 cups shredded Mexican cheese blend
1 cup thick and chunky salsa

PreHeat the oven to 400*

Mix the beef, onions, egg and crackers with 1 cup of the cheese and a 1/2 cup of the salsa.
Press into 12 muffin cups sprayed with cooking spray and indent each in the center with a spoon.
Bake 20-25 minutes and then top with the remaining cheese and salsa and bake for an additional 2-5 minutes, until the cheese has melted.

Serve and enjoy!
We served ours with Mexican rice along with salsa and sour cream on the side.

Children’s Apron from BuyCuteAprons.com Review


It’s no secret that our little Alexander, like the rest of our kids, likes to help out in the kitchen. He loves to help when we are cooking or baking and will jump at every chance he gets.

My only problem with him helping in the kitchen is he is not the most graceful little dude ( he gets it from his dad) and he likes to make a mess. When he is helping I’m always worried that he will get something on his clothes and ruin them or worse, something hot will splatter and burn him.

We recently received an awesome truck apron for the boy to wear when helping out in the kitchen or even when participating in a messy art activity from BuyCuteAprons.com.

This apron is great. It has the perfect design for him, keeps his clothes clean and dry and protects him. Another bonus about this apron is that it is super durable and easy to clean.

He absolutely loves it and has made it a permanent fixture on the doorknob in the kitchen when it is not in use. We have used it to protect him while cooking, painting, playing with play dough, coloring with markers and even while eating ice cream.

This apron is a very versatile item and we are glad to have it in our home. Now it is my mission to find an apron that I love just as much as he loves his and one for Ellie when she gets bigger!
